On Sundays and homemade airy pancakes
Goodmoooorning! It's raining here (for a change...)
And I'm here to tell you that it's SUnday! Yet again...
We have those markets to visit and those farmers to plead with,
for they bring their jewels to us.
I fell out of bed this morning...
A little too early for my liking,
for a Sunday... that is!!!
But, in preparation for another wonderful day,
I had to make something a little extra special this morning.

>>> Light & Airy Pancakes<<<
Ingredients:
3egg whites
1 spoon icing sugar
1/2 teaspoon bicarbonate soda
1 1/2 cups plain flour
1 cup milk
1/2 teaspoon vanilla extract
In a medium sized bowl, whisk egg whites with bicarbonate soda until soft peaks.
Set aside half the whisked egg whites.
Add milk, vanilla, then incorporate flour...
Fold in the peaked egg whites.
Heat your skillet on medium and coat with cooking spray.
Spoon dollops of batter and turn when bubbles appear on surface.
Serve with maple syrup or as you wish! ENJOY!
